PROCESSING INFORMATION

Produced at La Riviera Estate in Pereira, Risaralda, Colombia, by third-generation coffee producer Julio Cesar Madrid. Located at 1,700 masl in the Andean coffee region, the farm’s rich organic soils, cloud cover, and wide temperature range slow cherry ripening, helping develop complex flavours. Together with Café Uba, Julio Madrid has earned multiple national and international awards for coffee quality.

This coffee undergoes a controlled fermentation process designed to intensify its sensory profile. After pulping, the beans are fermented for 48 hours in a bioreactor using native farm yeasts (Kazachstania humilis), while temperature and acidity are carefully monitored. Once fermentation is complete, the coffee is washed and solar-dried to 40% humidity, then finished in a dehumidified dark room until reaching the ideal 11% moisture level, ensuring exceptional flavour clarity and quality.
